from Peru, Argentina, Chile, Mexico, Brazil, Uruguay and Venezuela.

Long before the Europeans discovered South America, the native
populations knew how to cultivate an incredible array of plants. They
developed elaborate irrigation systems, and terraced the steep Andean
mountain slopes to make them more suitable for growing food. They grew
corn, lima beans, potatoes, sweet potatoes, chilli peppers, avocados,
peanuts, chocolate, and raised llamas and guinea pigs. Each region
developed its own traditional dishes.
When the Europeans arrived, they incorporated some of these native
dishes into their own cuisine. They took the new foods back to Europe
and they brought European foods, such as pigs, chickens, citrus trees,
wheat, almonds, cows and goats to South America.
The Europeans learned to make their favorite Spanish, Italian and
Portuguese dishes using local ingredients. The Native American
traditional cooking methods were adapted and modified with the new foods
from Europe mixed in. Asian and African immigrants brought their
culinary traditions and blended in to create the diverse and exciting
cuisine that exists today.
With the rest of the world showing an interest in the cuisines of
South America, new combinations will emerge at The Dining Room where one
can indulge in classic Latin American dishes including Bolitas de yucca
(Manioc balls), Chupe de pescado y langostinos (fish and shrimp soup),
Arroz con pollo (chicken rice), Causa limeña (potato and tuna), Papas a
la huancaina (Huancaina sauce with potatoes), Anticuchos (beef heart and
liver), Aji de gallina and an array of delectable Latin treats at the
dinner buffet.
The scrumptious desserts include Charros (a fried dough snack), Arroz
con leche (Mexican rice pudding), Alfajor, Cajeta and Bimbunelos. |
