Spicy pasta soup
Ingredients
1 tbsp olive oil , plus extra for drizzling
1 red onion , finely chopped
1 red chilli , deseeded and finely sliced
800g tomatoes
1l vegetable stock
100g broken spaghetti
salt
handful of basil leaves, roughly torn
Method
Heat the oil in a large heavy-based saucepan. Add the onion and
chilli, then cook for 10 minutes until softened. Stir in the tomatoes,
breaking up with a spoon as you go, then pour in the stock. Cover, bring
to the boil, remove the lid, then simmer for five minutes.
Add the spaghetti, then simmer for six to eight minutes until it is
just cooked and add salt. Stir basil, then serve drizzled with olive
oil.
Banana Breakfast loaf
Time: one hour
Ingredients
75g butter , softened
110g sugar
125g flour
100g rice flour
2 tsp baking powder
2 eggs
4 ripe bananas , mashed
50g cashew , each snapped in half
1 lemon , juiced, mixed with 1 tbsp sugar to finish (optional)
Method
Heat the oven to 180C/fan 170C/gas 4. Beat the butter, sugar, flours,
baking powder, eggs and banana together. Stir in the nuts and spoon into
a lined and buttered 450g loaf tin.
Bake for 50 minutes or until a skewer comes out clean. spoon over the
lemon sugar, if using.
