ITI workshop on bakery technology The Industrial Technology Institute (ITI) will conduct a two-day Technology Transfer workshop for the bakery sector on February 26 and 27. This is the first workshop organised by ITI for the bakery sector this year. The institute conducted several well-attended workshops for this sector last year. A special feature of this year's program is the emphasis that will be provided to hygiene and sanitation practices so as to enable bakeries to obtain certification on Hazard Analysis and Critical Control Points (HACCP). This will ensure the food safety aspects of the bakery sector providing the consumer with a safe product. The first day of the workshop will include lectures and practical demonstrations on bakery product technology, hygiene and sanitation and processes leading to hazard analysis and critical control points. The product technologies such as bread, buns, cakes, pastries and pizzas will be highlighted in the demonstrations. On the second day visits will be organised to a model bakery as well as a leading raw material and machinery supplier so that the participants will be exposed to prevailing conditions in the sector. The program is targeted at bakery owners, potential entrepreneurs and school-leavers who are hopeful of commencing their own businesses. The medium of instruction of this workshop will be Sinhala and limited to about twenty-five participants. The participants will be awarded a valid certificate. |
