THE Colombo Plaza's culinary team, the winners of the prestigious
Black Box competition last year, will be representing Sri Lanka at the
MLA Black Box Culinary Challenge, third Regional Final, on September 3
and 4 at the Exhibition Center Queensland, Australia. This year leading
culinary teams of 17 countries will be participating at the event.
Convenor of Meat and Livestock Australia (MLA), Alan Palmer said that
the Colombo Plaza culinary team qualified to participate in this MLA
Black Box Culinary challenge beating 17 local leading culinary teams at
the competition which was held in BMICH last year.
"This MLA Black Box Culinary Challenge, third Regional Final
organised by the MLA provides a good platform to display their culinary
talents and skills with haute cuisine.
The MLA aims to create a profile for the product among young,
upcoming chefs. It also helps MLA and their partners to entertain trade
contacts and show their appreciation for their support.
Each team of three young chefs led by a team manager have to prepare
different menus using similar Australian ingredients in the meat,
seafood, dairy, horticulture and wine ranges of sponsors at the 17
kitchens.
Within an hour, and under the expert scrutiny of internationally
renowned professional chefs, the competitors have to improvise a menu.
"The fare, as per the rules of the competition, is a three-course meal
comprising cold appetizer, hot entree and dessert to conclude," Palmer
said.
A special jury comprising recognised professionals in culinary arts
will judge on composition, creativity, correct preparation, service
practicality and taste, proper utilisation of ingredients, presentation
and consistency. Finally the meal will be served at a dinner function
for over 500 invitees.
The top three winning teams will receive certificates with cash
awards and medals. |
