New range of ITI banana products The Food Product Development Group of the Agro and Food Technology Division has developed six banana products for the benefit of the food industry. Banana (Musa species) is one of the most important fruits cultivated in all parts of Sri Lanka. A large number of varieties are grown all over the country and among those varieties 'Ambul' (sour) variety and the 'Seeni' (sweet) variety are the most common varieties available during seasons. Since they are highly perishable they can be preserved using various preservation methods to increase the shelf life. Two officers of ITI recently underwent a training conducted by a food technologist from the Institute of Food Research and Product Development. Kasetsart University, Thailand held at the In-service Training Centre, Agunakolapelessa for trainers, to promote banana processing. The Japan International Cooperation Agency (JICA), who had sponsored the program also sponsored the training of the officers. The range of products made from banana includes Dried banana (banana fingers) - flattened shape and rolled shape, Banana chips (sweet and savoury flavoured), Banana paste (dodol type), Banana toffee, Banana jam and Banana sauce (white sour sauce). Ambul (sour) variety was used for all these products. The Food Product Development Group hopes to collaborate with potential entrepreneurs in developing these banana products for commercialization.
